POTATO DUMPLINGS

Preparation Time :
1 hour 20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Drop the potatoes into lightly salted boiling water and simmer for about 20 minutes or until tender. Drain, peel, mash and sieve them.
  • Mix the potatoes with butter and flour, egg, salt, pepper and nutmeg to taste. Work the mixture to a firm dough, add little extra flour if the dough is wet. Chill for 1 hour.
  • Form into small cylindrical shapes with floured hands.
  • Bring a very large pan of lightly salted water to the boil. Gently lower the dumplings into the water and simmer for about 5 -10 minutes or until they rise to the surface.
  • Melt the remaining butter. Place the dumplings on a heated serving dish, pour the melted butter over the top, sprinkle with Parmesan and serve.

INGREDIENTS

  • 500 grams floury potatoes
  • Freshly ground black pepper and salt
  • 50  grams butter
  • 100 grams flour
  • 1 small egg beaten
  • Freshly grated nutmeg
  • 50 grams freshly grated parmesan
