Preparation Method :
- Start by pouring the Vegetable Stock in a saucepan and simmer it gently.
- Now melt half of the Butter with the Olive Oil in a saucepan and add the Garlic and the Onions and sauté everything gently for 5 minutes.
- Now add the Rice and stir well to coat each grain with the Butter and the Oil.
- Add enough Stock just to cover the Rice and stir, simmer gently and keep stirring frequently.
- Then, when most of the liquid is absorbed, add more Stock and keep stirring well. Continue adding the Stock in stages and keep stirring until it is all absorbed.
- Then add the Vegetables and the Vermouth or the Wine with the final amount of stock. Mix everything well and cook for 2 minutes.
- Now remove the pan from the heat, season the rice and add the remaining Butter, the Parsley and the Parmesan Cheese. Mix well and serve hot.
INGREDIENTS
- 2 Quarts of Vegetable Stock
- 200 grams Butter
- 2 Tablespoons of Cooking oil
- 2 Crushed and chopped Garlic Cloves
- 2 Finely diced Onions
- 600 grams Arborio or Carnaroli Rice
- 500 Grams of trimmed and cut Green Beans
- 500 Grams of trimmed and cut Asparagus
- 300 grams of shelled Peas
- 300 grams of shelled Fava Beans
- 10 Tablespoons of dry Vermouth or White Wine
- 4 Tablespoons of chopped Parsley
- 400 grams of freshly grated Parmesan Cheese
- Salt and pepper as preferred
