GREEN RISOTTO

Preparation Time :
20 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Start by pouring the Vegetable Stock in a saucepan and simmer it gently.
  • Now melt half of the Butter with the Olive Oil in a saucepan and add the Garlic and the Onions and sauté everything gently for 5 minutes.
  • Now add the Rice and stir well to coat each grain with the Butter and the Oil.
  • Add enough Stock just to cover the Rice and stir, simmer gently and keep stirring frequently.
  • Then, when most of the liquid is absorbed, add more Stock and keep stirring well. Continue adding the Stock in stages and keep stirring until it is all absorbed.
  • Then add the Vegetables and the Vermouth or the Wine with the final amount of stock. Mix everything well and cook for 2 minutes.
  • Now remove the pan from the heat, season the rice and add the remaining Butter, the Parsley and the Parmesan Cheese. Mix well and serve hot.

INGREDIENTS

  • 2 Quarts of Vegetable Stock
  • 200 grams Butter
  • 2 Tablespoons of Cooking oil
  • 2 Crushed and chopped Garlic Cloves
  • 2 Finely diced Onions
  • 600 grams Arborio or Carnaroli Rice
  • 500 Grams of trimmed and cut Green Beans
  • 500 Grams of trimmed and cut Asparagus
  • 300 grams of shelled Peas
  • 300 grams of shelled Fava Beans
  • 10 Tablespoons of dry Vermouth or White Wine
  • 4 Tablespoons of chopped Parsley
  • 400 grams of freshly grated Parmesan Cheese
  • Salt and pepper as preferred
