Preparation Method :
- Pour the stock into a saucepan and simmer gently.
- Melt half of the butter with the oil in a heavy-based saucepan. Add the garlic and onion and sauté gently for 3 mints.
- Add the rice and stir well to coat each grain with the butter and oil. Add enough stock to just cover the rice and stir well.
- Simmer gently, stirring frequently. When most of the liquid is absorbed, add more stock.
- Continue adding the stock in stages and stirring until it is absorbed.
- When all the stock has been added, and the rice is just cooked with a rich, creamy sauce, add the herbs, the remaining butter, and the cheese.
- Season and stir well. Garnish with herb sprigs and serve at once.

- 2 quart chicken or vegetable stock
- 200 grams butter
- 4 tablespoons Cooking oil
- 2 garlic clove, crushed and chopped
- 2 onion, finely chopped
- 400 grams Arborio or carnaroli rice
- Parsley, chopped
- Basil, chopped
- Oregano, chopped
- Thyme, chopped
- 400 grams grated Toma Cheese
- Salt and pepper
- Herb sprigs, to garnish
