FRESH VEGETABLE PIZZA

Cooking Time :
30 minutes

Preparation Method :

  • Put the pizza bases onto warmed baking sheets, brush with a little oil, then arrange the vegetables on the bases, sprinkling them with the thyme leaves and roughly torn basil.
  • Season the pizzas generously with salt and pepper. Drizzle with the remaining oil and bake at the top of a preheated oven, 450ºF, for 10 minutes.
  • The vegetables should be slightly charred around the edges as this adds to the flavor.
  • Serve with fresh Parmesan shavings, if desired.

INGREDIENTS

  • 2 Quick Pizza Base
  • 10 tablespoons Cooking oil
  • 4 garlic cloves, crushed
  • 2 red onion, finely sliced
  • 4 zucchini, thinly sliced lengthwise
  • 2 red bell pepper, cored, seeded and cut into thin strips
  • 2 yellow bell pepper, cored, seeded and cut into thin strips
  • 8 plum tomatoes, peeled, cored and cut into small wedges
  • 750 grams asparagus, trimmed
  • 8 thyme sprigs, separated into leaves
  • Basil leaves, roughly torn 
  • Salt and pepper
  • 100 grams fresh Parmesan shavings (optional), to serve
