TORTIGLIONI WITH TUNA AND TOMATO

Preparation Time :
10 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Cook the pasta in a large saucepan filled with boiling salted water for about 10 minutes until it is just tender.
  • Heat the oil in a saucepan over a low heat and gently fry the garlic and onion until softened, stirring constantly to ensure they do not brown.
  • Add the remaining ingredients, except the evaporated Milk, adjust seasoning and simmer for 10 minutes.
  • Stir in the Evaporated Milk and return to the boil.
  • Drain the pasta well and toss in the sauce. Serve at once, sprinkled with the shavings of fresh Parmesan cheese.

INGREDIENTS

  • 300 grams tortiglioni pasta 
  • 220 grams tuna, drained and broken into chunks
  • 150 grams Evaporated Milk 
  • 1 tablespoon Cooking oil
  • 1 onion, chopped
  • 450 grams chopped tomatoes
  • 1 clove garlic, crushed
  • 2 tablespoons tomato puree or sun-dried tomato paste
  • 50 grams black olives, 
  • Salt and black pepper, to taste
  • Shavings of fresh Parmesan cheese, to serve
