TORTIGLIONI WITH TUNA AND TOMATO

Preparation Method :
- Cook the pasta in a large saucepan filled with boiling salted water for about 10 minutes until it is just tender.
- Heat the oil in a saucepan over a low heat and gently fry the garlic and onion until softened, stirring constantly to ensure they do not brown.
- Add the remaining ingredients, except the evaporated Milk, adjust seasoning and simmer for 10 minutes.
- Stir in the Evaporated Milk and return to the boil.
- Drain the pasta well and toss in the sauce. Serve at once, sprinkled with the shavings of fresh Parmesan cheese.

- 220 grams tuna, drained and broken into chunks
- 150 grams Evaporated Milk
- 1 tablespoon Cooking oil
- 1 onion, chopped
- 450 grams chopped tomatoes
- 1 clove garlic, crushed
- 2 tablespoons tomato puree or sun-dried tomato paste
- 50 grams black olives,
- Salt and black pepper, to taste
- Shavings of fresh Parmesan cheese, to serve
