- Boil water in a pot and cook the broccoli, carrot and zucchini for 5 minutes until the vegetables is tender. Drain and keep it aside.
 - In a frying pan, heat the olive oil. Sauté red and yellow bell pepper, onions and tomatoes for 5-8 minutes.
 - Now add the cooked broccoli, carrot and zucchini. Season it with Italian herbs, salt and pepper. Stir it well.
 - Add the pasta and coat it well with above prepared mixture. (If the pasta seems too dry then add some hot water as per the required consistency).
 - Garnish it with the Parmesan cheese and serve it piping hot.
 
INGREDIENTS
- 500 grams farfalle/penne pasta (cooked and drained)
 - 50 grams grated Parmesan cheese
 - 50 grams broccoli (cut into bite-size florets)
 - 3 tomatoes (cut into wedges)
 - 2 carrots (peeled and thinly sliced)
 - 1 zucchini (thinly sliced)
 - 1 onion (thinly sliced)
 - ½ yellow bell pepper (julienned)
 - ½ red bell pepper (julienned)
 - 3 tablespoon Cooking oil
 - 1 tablespoon dried mixed Italian herbs (Basil, Rosemary, Oregano, Parsley and Thyme)
 - Salt to taste
 - Black pepper to taste (freshly grounded)
 - Water
