PASTA PRIMAVERA

20 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Boil water in a pot and cook the broccoli, carrot and zucchini for 5 minutes until the vegetables is tender. Drain and keep it aside.
  • In a frying pan, heat the olive oil. Sauté red and yellow bell pepper, onions and tomatoes for 5-8 minutes.
  • Now add the cooked broccoli, carrot and zucchini. Season it with Italian herbs, salt and pepper. Stir it well.
  • Add the pasta and coat it well with above prepared mixture. (If the pasta seems too dry then add some hot water as per the required consistency).
  • Garnish it with the Parmesan cheese and serve it piping hot.

INGREDIENTS

  • 500 grams farfalle/penne pasta (cooked and drained)
  • 50 grams grated Parmesan cheese
  • 50 grams broccoli (cut into bite-size florets)
  • 3 tomatoes (cut into wedges)
  • 2 carrots (peeled and thinly sliced)
  • 1 zucchini (thinly sliced)
  • 1 onion (thinly sliced)
  • ½ yellow bell pepper (julienned)
  • ½ red bell pepper (julienned)
  • 3 tablespoon Cooking oil
  • 1 tablespoon dried mixed Italian herbs (Basil, Rosemary, Oregano, Parsley and Thyme)
  • Salt to taste
  • Black pepper to taste (freshly grounded)
  • Water
