- Boil the water with a teaspoon of salt. Cook the pasta for 8-10 minutes. Drain and keep it aside.
- Heat olive oil in a frying pan and add the mushrooms and spring onions. Sauté it until the mushroom turns tender and brown in colour.
- Now add the garlic, thyme leaves, salt, pepper and white wine. Cook for 5 minutes. (Stir it constantly).
- Turn off the heat and gently stir in the heavy cream. Add the cooked pasta. Stir it well to mix all the ingredients.
- While serving, sprinkle the grated cheese and then serve it.
- Serve with the soured cream.
INGREDIENTS
- 375 mixed mushrooms (shiitake/crimini/button mushroom) /single mushroom of any type (cleaned and sliced)
- 250 grams pasta of any choice (penne/fusilli/fettuccine/spaghetti)
- 2 cloves garlic (finely chopped)
- 1 spring onion (chopped)
- 60 ml dry white wine
- 30 ml heavy cream
- 3 tablespoons Cooking oil
- 2 tablespoons fresh thyme leaves (finely chopped)
- 2 tablespoons grated feta cheese for garnishing
- Water for cooking pasta
- Salt to taste
- Freshly ground black pepper to taste
