Preparation Method :
- Heat a pan and add 3 tablespoons of olive oil. Sauté onion, garlic and tomatoes for 3-5 minutes.
- Add water and cook it at low temperature for 10 minutes until the sauce thickens (add some more water if required).
- Gently stir in red wine vinegar and then add basil leaves, red pepper flakes, salt and pepper. Cook for 1-2 minutes and turn off the heat.
- Mix the cooked macaroni with half the quantity of above prepared sauce.
- Grease a baking dish with olive oil and add a layer of 1/3 or ½ of the cooked macaroni at the bottom followed by a layer sauce.
- Sprinkle parsley leaves. Top it up with parmesan cheese. Repeat the layering in the same manner until all the ingredients are used.
- Bake at 200 degree C in a preheated oven for 10-15 minutes until top layer is bubbling or cheese has melted.
- Allow it to stand for 10 minutes and then serve it.

- 250 grams macaroni (boiled and drained)
- 500 grams tomatoes
- 100 grams parmesan cheese
- 1 onion (finely chopped)
- 2 cloves of garlic (finally chopped)
- 2 teaspoon red pepper flakes
- 4 tablespoons Cooking oil
- 3 tablespoons chopped Italian parsley
- 2 tablespoons fresh basil leaves
- 1 tablespoon red wine vinegar
- 240 ml water
- Salt as per taste
- Pepper as per taste
