LINGUINE WITH VEGETABLES

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat up a griddle pan and add the Red Bell Pepper, skin side down, and griddle until the skin blisters and blackens.
  • Now griddle the Zucchini, the Onions and the Eggplant Slices and the Asparagus for 2 minutes on each side.
  • Alternatively, you can cook all the Vegetables under a preheated hot broiler.
  • Now peel the skin off the Peppers and slice them into Ribbons. Now place the bell pepper in a dish with the Zucchini, the Onions, the Eggplants and the Asparagus and drizzle with the Olive Oil. Keep everything warm in a low oven.
  • Meanwhile bring a large saucepan of water to boil. Add and cook the Linguine Pasta for 3 minutes if the Pasta is homemade fresh or 8 minutes or according to packet directions if the Pasta is dried. Then add the Petits Pois for the last minute of the cooking time.
  • Now drain the Pasta and the Petits Pois and return to the saucepan. Add the Vegetables, the Seasoning and the Parmesan. Now it's time to toss well adding a little more Olive Oil if necessary and add the Basil and toss again thoroughly and serve immediately.

INGREDIENTS

  • 2 Cored, seeded and chopped Red Bell Peppers
  • 2 Sliced Zucchini
  • 2 Sliced Red Onions
  • 50 grams of Greean peas
  • 2 Sliced (in thin rounds) Small Eggplants
  • 16 Trimmed Asparagus Stalks
  • 10 Tablespoons of Cooking oil
  • 500 Grams of Linguine Pasta
  • 6 Tablespoons of frozen Petits Pois
  • 400 grams of freshly grated Parmesan Cheese
  • A Handful of Chopped Basil Leaves
  • Salt and Pepper as preferred
