Preparation Method :
- Heat the olive oil in a pan and add the chicken. Sprinkle half the teaspoon of salt and cook it for 5-7 minutes until it is no longer pink (stirring occasionally).
- Add the onion, garlic, carrots and celery and cook until the vegetables are tender (3 to 5 minutes).
- Now gently stir in the tomato sauce and stir it well.
- Adjust the salt content according to the taste. Add the rest of the seasoning ingredients. (thyme, basil, oregano, chilli flakes and pepper). Cook for another 3-5 minutes and then turn of the heat.
- Add the cooked spaghetti or linguine and toss it well. (If it too dry then add the reserved cooking water).
- Serve it hot.

- 150 grams chicken mince
- 150 grams spaghetti or linguine (cooked and drained)
- 250 ml of pasta cooking water (reserved while draining the cooked pasta)
- 250 ml tomato sauce
- 2 sticks celery (finely sliced)
- 1 garlic clove (crushed)
- 1 onion (finely chopped)
- 1 carrot (sliced)
- 2 teaspoons Cooking oil
- 1 teaspoon oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon chilli flakes
- Salt to taste
- Pepper to taste
