AGLIO E OLIO (PASTA WITH GARLIC AND OLIVE OIL)

Preparation Time :
10 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Cook the spaghetti with water and a teaspoon of salt. Reserve ½ cup of cooked (pasta) water and drain the rest of the water.
  • Heat 3 tablespoons of olive oil in a sauce-pan, add the garlic and sauté it until it turns light golden brown (30 seconds).
  • Immediately turn off the heat and add the reserved pasta water and swirl the pan. (This prevents the overcooking of garlic.)
  • Add cooked spaghetti, lemon juice, cheese, butter, red pepper flakes, salt and pepper.
  • Mix it well to coat all the ingredients evenly. Now cook for 5 minutes.
  • Transfer the pasta to the serving bowl. Sprinkle the remaining 1 teaspoon of olive oil and garnish it with freshly chopped parsley.
  • Serve it immediately.

INGREDIENTS

  • 250 grams spaghetti (uncooked)
  • 30 grams parmesan/cheddar cheese
  • 10 cloves of garlic (minced)
  • 4 tablespoons Olive Oil
  • 1 teaspoon dried red pepper flakes
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon butter
  • Salt to taste
  • Black pepper to taste
