ROAST COD WITH VEGETABLES

Preparation Method :
- Put the cod, potatoes, tomatoes, onion, and fennel into a large, lightly oiled dish. Try and arrange them in a single layer.
- Sprinkle with the garlic, olives, capers, and lemon juice, and season with salt and pepper.
- Drizzle with oil, place in the top of a preheated oven, 450°F and roast for 25 minutes.
- Garnish with parsley and serve.
INGREDIENTS
- 750 grams cod fillets, skinned
- 8 potatoes, unpeeled and quartered
- 10 tomatoes, halved
- 2 red onion, quartered
- 2 Florence fennel bulb, cut into wedges
- 4 garlic cloves, crushed
- 400 grams pitted black olives
- 100 grams pitted green olives
- 4 tablespoons capers
- Juice of 2 lemons
- 5 tablespoons Cooking oil, plus extra for oiling
- Salt and pepper
- Italian parsley, chopped, to garnish
