GRILLED ITALIAN VEGETABLES

Preparation Time :
25 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Prepare the marinade by combining basil, oregano, garlic, red pepper flakes, oil, cheese and tomato sauce, salt and pepper. Mix it well.
  • Add mushroom, zucchini, bell peppers, onion and cherry tomatoes to the marinade. Coat it well.
  • Refrigerate for 2 hours. Remove vegetables from marinade. Keep aside the marinade remaining.
  • Now insert the vegetables alternately in the metal skewers, beginning and ending with a bell pepper.
  • Bush it with the remaining marinade.
  • Grill it for 15-20 minutes until the vegetables are tender.
  • Serve it hot.

INGREDIENTS

  • 2 small zucchini (cut into squares) 
  • 1 red bell peppers (cut into squares)
  • 4 cherry tomatoes 
  • 7-8 fresh mushroom (cut into chunks)
  • 1 onion (cut into squares)
  • 2 cloves of garlic (crushed) 
  • 50 grams cheddar cheese
  • 2 teaspoons dried basil 
  • 1 teaspoon dried oregano
  • ¼ teaspoon crushed red pepper flakes 
  • 3 tablespoons Cooking oil
  • 3 tablespoons tomato sauce
  • Salt as per taste
  • Pepper as per taste
