BROILED RED MULLET WITH SALSA VERDE

Preparation Method :
- Make 3 slashes across the fish on each side and season with salt and pepper.
- Place under a preheated very hot broiler and cook on each side for 6-8 minutes or until cooked.
- To make the salsa Verde, put the parsley, basil, anchovies, capers, and garlic into a food processor or blender and process to a smooth paste.
- Add the lemon peel and juice, and oil. Season with salt and pepper and blend again.
- Remove the fish from the broiler and put a spoonful of the salsa Verde into each of the slashes on one side of the fish.
- Serve the remaining salsa Verde at the table in a small serving dish.

- 500 grams red mullet, scaled and cleaned
- Salsa Verde
- 750 grams chopped Italian parsley
- 750 grams chopped basil
- 10 anchovy fillets, roughly chopped
- 4 tablespoons capers
- 4 garlic cloves, crushed
- Peel and juice of 2 lemons
- 300 grams Cooking oil
- Salt and pepper
