BROILED FILET OF VENISON

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Brush the venison steaks with the oil and season well with salt and pepper.
  • Heat a little oil in a saucepan. Add the shallot and garlic, and sauté for 3 minutes.
  • Add the wine, cloves, cinnamon, orange rind, juniper berries, and red currant jelly, and simmer until it reduces to a rich sauce.
  • While the sauce is cooking, place the venison fillets on a broiler rack and cook under a preheated hot broiler for 6 minutes on each side.
  • To serve, strain the sauce and spoon over the venison steaks.
  • Serve with buttered pasta or Creamed Polenta with Dolce latte and Mascarpone.

INGREDIENTS

  • 200 grams venison filet steaks
  • 4 tablespoons Cooking oil, plus extra for sauteeing
  • 2 shallot, finely chopped
  • 4 garlic cloves, crushed 
  • 300 grams red wine
  • 8 cloves
  • 2 piece of cinnamon stick 
  • Pared rind of 2 orange 
  • 20 juniper berries, crushed
  • 6 tablespoons red currant jelly
  • Salt and pepper
  • Buttered pasta or Creamed Polenta with Dolce latte and Mascarpone, to serve
