TROUT WITH PARMESAN AND BASIL DRESSING

Preparation Method :
- Lightly brush a baking sheet with oil and place under a preheated very hot broiler to heat up.
- Put the trout fillets onto the hot tray. Sprinkle with salt and pepper and place under the broiler for 5 minutes.
- Put the basil and garlic into a bowl. Wok in the oil using a hand-held blender.
- Remove the fish from the broiler and sprinkle with the grated Parmesan.
- Return to the broiler and cook for 3-5 minutes more or until the Parmesan turns golden.
- Serve with the basil sauce drizzled over the trout fillets.

- 8 tablespoons Cooking oil
- 300 grams trout fillets
- Basil leaves, roughly chopped
- 2 garlic clove, crushed
- 300 grams freshly grated Parmesan cheese
- Salt and pepper
