SPICY FRIED SARDINES

Preparation Method :

  • Heat the oil for deep-frying in a deep saucepan or deep-fat fryer. Season the flour with salt and pepper.
  • Dip the sardines into the flour to coat evenly and fry in the hot oil for 2 minutes or until golden.
  • Remove and place on a tray lined with paper towels to absorb the excess oil. Keep warm.
  • Heat the olive oil in a saucepan. Add the shallots and sauté for 5 minutes, then add the vinegar and cook until nearly half of it has evaporated, four Transfer the sardines to a warmed serving dish.
  • Add the remaining olive oil, the garlic, mint, lemon peel and juice, and chilies to the onion mixture and cook for 1 minute.
  • Spoon the sauce over the sardines and sprinkle with salt and pepper.
  • Served hot or at room temperature.

INGREDIENTS

  • IDHAYAM Sesame Oil, for deep-frying
  • 300 grams all-purpose flour
  • 1 kg large, fresh sardines, cleaned
  • 8 tablespoons Cooking oil
  • 10 shallots, sliced
  • 200 grams white wine vinegar
  • 8 garlic cloves, crushed
  • Mint leaves, finely chopped
  • Peel and juice of 2 lemons
  • 1teaspoon crushed dried chilies
  • Salt and pepper
