Preparation Method :
- Cut 4 sheets of waxed paper large enough to enclose the fish and vegetables.
- To prepare the fennel, trim the top and outer leaves, remove the hard central core, and cut the bulb into slices through the root.
- Divide evenly between the sheets of waxed paper and put the fish on top. Sprinkle with the shallots, olives, and sage.
- Season with salt and pepper, and finish with a slice of lemon.
- The waxed paper can be folded over and rolled at the edges to seal, but a much easier way is to fold the paper and staple it.
- Put the packages onto a baking sheet and cook in a preheated oven, 400°F for 25 minutes.
- Serve these packages at the table so that everyone opens their own package and gets a waft of the delicious aroma that escapes when they are first opened.

- 15 pitted black olives
- A few sage leaves, torn
- 6 lemon slices
