ROMAN CHICKEN

Preparation Method :

  • Heat the oil in a large frying pan. Add the onions, garlic, red and yellow bell peppers, and chilies, and sauté for 5 minutes.
  • Add the chicken thighs, pushing them down to the bottom of the pan to seal on the outside. Cook for 5 minutes more.
  • Add the wine and salt and pepper to taste. Cover the pan and cook for about 15 minutes over a low heat.
  • Check occasionally that the chicken and sauce do not stick to the bottom of the pan and add a little more wine if necessary.
  • Stir in the basil just before serving. 

INGREDIENTS

  • 8 tablespoons Cooking oil
  • 4 red onions, sliced
  • 4 garlic cloves, sliced
  • 4 red bell peppers, cored, seeded and sliced
  • 4 yellow bell peppers, cored, seeded and sliced
  • 1 teaspoon crushed dried chilies
  • 15 boneless chicken thighs
  • 200 ml white wine
  • Basil, roughly torn
  • Salt and pepper
