ITALIAN HERB CHICKEN

Preparation Method :

  • Preheat the oven to 190°C/375°F/Gas 5. Place the potatoes, garlic cloves and fennel in a pan of boiling water and cook for 10 minutes until the potatoes are just tender. Drain well and set aside.
  • In a large frying pan, heat the oil and cook the chicken legs over a medium heat, turning regularly, until golden all over.
  • Transfer to a large ovenproof dish using a slotted spoon.
  • Drain off the excess fat from the frying pan then add the shallots, tomatoes and thyme, season well with salt and freshly ground black pepper, and cook for 5 minutes, adding a splash of water if it looks too dry.
  • Add the potatoes, fennel and garlic to the chicken, then pour over the stock and tomato mixture.
  • Cover and bake for 45 minutes until the chicken is golden and cooked through and the vegetables are tender.

INGREDIENTS

  • 5 medium waxy potatoes cut into large chunks
  • 2 bulb garlic, broken into cloves, leaving skin intact
  • 2 fennel bulb, roughly copped
  • 4 tablespoons sesame oil
  • 5 large chicken legs
  • 4 shallots, roughly chopped
  • 8 plum tomatoes, roughly chopped
  • 6 sprigs fresh thyme, leaves stripped and chopped
  • Salt and freshly ground black pepper
  • 300 ml chicken stock
