CHICKEN SALTIMBOCCA

Preparation Method :

  • Split each breast fillet horizontally in two to make thin steaks. Place a thin slice of Parmesan cheese in the centre and top each with a slice of prosciutto.
  • Place a sage leaf in the centre and secure with a cocktail stick or a toothpick.
  • Melt the butter in a large frying pan over a medium heat, add chicken pieces and brown quickly, a few minutes on each side or until cooked through.
  • Adjust seasoning with black pepper to taste, arrange on a serving dish and set aside to keep warm.
  • Add wine to the pan, add a dollop of butter for a sauce. Drizzle sauce over chicken pieces and serve immediately.

INGREDIENTS

  • 50 grams slices fresh Parmesan cheese
  • 500 grams prosciutto
  • 50 grams butter
  • 1 kg boneless chicken breast fillets
  • 100 ml dry white wine
  • 8 fresh sage leaves
  • Freshly ground black pepper
