CHICKEN PARMESAN-STYLE

Preparation Method :

  • Preheat the oven to 180° C/350° F/ gas 4.
  • To cut the chicken into serving portions, divide each leg into thigh and drumstick by cutting through the centre joint.
  • First slice into the white breast meat to make a better portion. Pull the wing away and cut through the exposed joint.
  • Separate the whole breast from the back by cutting through the rib bones along the side of the body.
  • Then cut down the centre of the breastbone to divide the breast into two.
  • Rub with salt and pepper.
  • Heat the olive oil in a large flameproof casserole or saucepan. Add the chicken pieces and fry until they are evenly browned.
  • Chop the tomatoes, Add the vegetables, oregano, juice from the can of tomatoes and the wine or sherry to the chicken, and bring to the boil, stir it occasionally.
  • Cover the casserole and transfer it to the oven. Bake for 1½ hours, or until the chicken is cooked through.
  • Sprinkle with the grated cheese over the top and serve at once.

INGREDIENTS

  • 2 kg chicken
  • Salt and freshly ground black pepper
  • 120 ml Cooking oil
  • 1 medium green pepper, sliced
  • 150 grams mushrooms, sliced
  • 3 medium onions, sliced
  • 2 garlic cloves, crushed
  • 1 teaspoon dried oregano
  • 420 grams canned tomatoes, with their juice
  • 4 tablespoon dry white wine or sherry
  • 75 grams Parmesan cheese, freshly grated
