CHICKEN BOLOGNESE-STYLE

Preparation Method :

  • Cut each chicken breast in half, crosswise. Place each piece in between two sheets of waxed paper or greaseproof and with a rolling pin pound to flatten. Remove paper.
  • Coat chicken with the seasoned flour, shaking off any excess.
  • Melt half the butter in a large frying- pan. Add the chicken pieces and fry until they are lightly and evenly browned and cooked through. Remove from the heat.
  • Meanwhile, melt the remaining butter. Remove from the heat.
  • Place a slice of ham on each chicken piece and sprinkle over about ¾ of the grated cheese.
  • Pour over the melted butter. Return the frying-pan to moderate heat, cover and cook until the ham is hot and the cheese has melted.
  • Transfer to a warmed serving dish and serve with the remaining Parmesan cheese.

INGREDIENTS

  • 4 chicken breasts, skinned and boned
  • 2 tablespoon seasoned flour
  • 50 grams butter
  • 9 slices smoked ham, thinly sliced and cut a little smaller than the chicken breasts
  • 50 grams Parmesan cheese, grated
