Preparation Method :
- Cut all the vegetables in separate bowl. Sprinkle some (2 tablespoons) olive oil in each bowl and season them with salt and pepper.
- Combine fontina and romano cheese together.
- Grease a baking dish with remaining olive oil. Arrange half the quantity of zucchini slices on bottom of the dish.
- Top it up with one or two tablespoon of heavy cream. Spread fontina and romano cheese mixture.
- Repeat the same kind of layering with half the quantity of other vegetables like potato, onion, red bell pepper.
- Now arrange another layer of all the remaining vegetables in the same manner. Top layer must be of capsicum.
- Spread the mozzarella cheese on top.
- Cover it loosely with foil and bake it at 190 degree C for 30 minutes in a pre-heated oven.
- Remove the foil and Bake it for another 10 minutes until the top is golden brown in colour.
- Serve it hot.

- 2 onions (thinly sliced)
- 2 potatoes (thinly sliced)
- 3 tablespoons Cooking oil
- 2 zucchini (sliced lengthwise)
- 240 ml heavy cream
- 100 gram mozzarella cheese (grated)
- 75 grams fontina cheese (grated)
- 75 grams Romano cheese (grated)
- Salt to taste
- Pepper to taste (freshly ground)
