TIRAMISU WITH RASPBERRY SURPRISE

Preparation Method :
- Blend the Coffee and Grappa or Brandy in a bowl.
- Now dip the Sponge Fingers in the liquid and coat them fully and evenly.
- Then arrange them on a small dish or a serving platter and pour over them any excess liquid. Now sprinkle the Raspberries evenly over the soaked Sponge Fingers.
- Now whisk the Mascarpone Cheese, the Egg Yolks and the sugar together in a bowl until it's all smooth and well blended.
- In a separate bowl, whisk the Egg Whites until these are stiff and glossy and then fold the Egg Whites and the Mascarpone mixture together until all of it is well blended.
- Now spoon the mixture over the Sponge Fingers and smooth the surface.
- Finely grate the Chocolate straight on the mixture. Cover and chill the dessert until it sets.
INGREDIENTS
- 8 Tablespoons of very strong Espresso Coffee
- 4 Tablespoons of Grappa or Brandy
- 20 Sponge Fingers
- 500 Grams of Raspberries
- 350 Grams of Mascarpone Cheese
- 4 Separated Eggs
- 8 Tablespoons of confectioners' sugar and squares of Dark Chocolate
