Preparation Method :
- Put the milk, sugar, and vanilla extract into a saucepan and heat to simmering point, then turn off the heat.
- Melt the butter in a heavy-based saucepan. Add the lemon peel and rice, and mix well to coat the grains.
- Add the raisins and a ladleful of hot milk and stir well.
- When the rice has absorbed the milk, add another ladleful.
- Continue to add the milk in stages and stir until it is all absorbed.
- The rice should be slightly al dente and with a creamy sauce.
- Serve the risotto in individual dishes.
- Sprinkled with toasted slivered almonds and drizzled with honey.
