SWEET RISOTTO

Preparation Method :

  • Put the milk, sugar, and vanilla extract into a saucepan and heat to simmering point, then turn off the heat.
  • Melt the butter in a heavy-based saucepan. Add the lemon peel and rice, and mix well to coat the grains.
  • Add the raisins and a ladleful of hot milk and stir well.
  • When the rice has absorbed the milk, add another ladleful.
  • Continue to add the milk in stages and stir until it is all absorbed.
  • The rice should be slightly al dente and with a creamy sauce.
  • Serve the risotto in individual dishes.
  • Sprinkled with toasted slivered almonds and drizzled with honey. 

INGREDIENTS

  • 500 ml milk
  • 4 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 20 grams butter
  • Finely grated peel of 2 lemon
  • 400 grams Arborio or carnaroli rice
  • 300 grams raisins
  • 200 grams toasted slivered almonds
  • 5 tablespoons honey
