Preparation Method :
- Heat the oven to 180° C/350° F/gas 4. Lightly butter a shallow ovenproof dish large enough to hold the peach halves in a single layer.
- Scoop out about one-third of the peach flesh from each peach and put it into a bowl, then mash to a pulp.
- Beat butter and sugar until pale and fluffy. Add egg yolk and continue beating until blended.
- Stir in crushed amaretti, peach pulp and Amaretto liqueur( optional ).
- Divide equally between the peach halves and arrange peaches in dish.
- Bake it for about 30 minutes, until stuffing is set. Serve hot, with cream.

- 50 grams caster sugar

- 120 grams amaretti finely crushed
- 1 teaspoon Amaretto liqueur (optional) to serve
