Preparation Method :
- Sieve the cheeses and salt into a bowl. Stir in the rum lightly, Then Stir or fold in the sugar and chocolate.
- Chop the peel finely and stir into the cheese mixture. Chill for 1 hour.
- Heat the apricot jam in a small pan until liquid, then brush over the inside of the pastry case.
- Fill the case with the cheese mixture. Chill until needed.
- Scatter grated chocolate and chopped peel over the pie before serving.
INGREDIENTS
- 350 grams ricotta or low fat curd cheese
- 125 grams cottage cheese
- Pinch of salt
- 3 tablespoon cognac or rum
- 75 grams caster sugar
- 3 tablespoon apricots jam for brushing
- 60 grams bitter chocolate, grated
- Grated chocolate to decorate
- 50 grams preserved orange peel, plus extra to decorate Baked pastry case
