SICILIAN CHOCOLATE PIE

Preparation Time :
2 hours 10 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Sieve the cheeses and salt into a bowl. Stir in the rum lightly, Then Stir or fold in the sugar and chocolate.
  • Chop the peel finely and stir into the cheese mixture. Chill for 1 hour.
  • Heat the apricot jam in a small pan until liquid, then brush over the inside of the pastry case.
  • Fill the case with the cheese mixture. Chill until needed.
  • Scatter grated chocolate and chopped peel over the pie before serving.

INGREDIENTS

  • 350 grams ricotta or low fat curd cheese
  • 125 grams cottage cheese
  • Pinch of salt
  • 3 tablespoon cognac or rum
  • 75 grams caster sugar
  • 3 tablespoon apricots jam for brushing 
  • 60 grams bitter chocolate, grated
  • Grated chocolate to decorate
  • 50 grams preserved orange peel, plus extra to decorate Baked pastry case
