Preparation Method :
- Put the sugar in a heavy-based saucepan with water. Heat gently, stir until the sugar is dissolved.
- Turn up the heat and boil the syrup to 130° C/260° F; at this temperature a sample in cold water will make a hard ball.
- Whisk the egg whites until softly peaked.
- Pour the syrup on to the beaten egg whites a little at a time, whisking all the time.
- Continue until the meringue is smooth and shiny. Leave to cool.
