ITALIAN CAKE FROSTING

Preparation Time :

Cooking Time :
30 minutes

Preparation Method :

  • Put the sugar in a heavy-based saucepan with water. Heat gently, stir until the sugar is dissolved.
  • Turn up the heat and boil the syrup to 130° C/260° F; at this temperature a sample in cold water will make a hard ball.
  • Whisk the egg whites until softly peaked.
  • Pour the syrup on to the beaten egg whites a little at a time, whisking all the time.
  • Continue until the meringue is smooth and shiny. Leave to cool.

INGREDIENTS

  • 250 grams granulated sugar
  • 4 large egg whites
