FRUIT CAKE PUDDING

Preparation Time :
2 hours 20 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Place the cake slices on 4 individual dessert plates.
  • Carefully spoon some whisky over each, allowing it to soak in.
  • Peel the oranges, dividing them into segments, and remove all the pith.
  • Arrange a quarter of the segments on each slice. Chill for at least 2 hours.
  • Place the egg yolks and caster sugar in the top pan of a double boiler and whisk over hot water until thick.
  • Dart the egg whites until thick and whip the cream until it stands in soft peaks.
  • Fold the wine, lemon zest, egg whites and cream into the yolks.
  • Spoon over the oranges and either serve immediately or place under a very hot grill until glazed.

INGREDIENTS

  • 4 slices any rich fruit cake
  • 150 ml whisky
  • 2 large oranges
  • 2 large eggs, separated
  • 4 tablespoon caster sugar
  • 150 ml double cream
  • 4 tablespoon sweet white wine
  • Grated zest ½ large lemon
