Preparation Method :
- Place the egg yolks and sugar in the top of a double boiler and beat for 1 minute.
- Set over low heat so the water does not boil and whisk until the mixture begins to thicken - about 3 minutes.
- Add the Marsala and whisk until thick and pale in color then add finely grated lemon zest.
- Continue whisking the mixture until it doubles for about 3-5 minutes.
- Rinse the serving glasses with warm water , then Pour the mixture into glasses and serve immediately with sponge fingers.
