CLASSIC BAKEWELL TART

Preparation Method :

  • Preheat the oven to 180°C / 350°F / Gas Mark 4.
  • Roll out the pastry and use to line a 9 inch round flan tin. Reserve the trimmings. Blind bake the pastry case for about 10-12 minutes.
  • Beat together the butter and sugar in a separate bowl.
  • Beat in the eggs with Evaporated Milk, almonds and almond essence. Add in the flour.
  • Spread the jam over the cooked pastry case. Spoon the creamed mixture. Roll out the reserved pastry, cut into flat noodles and use to make a lattice.
  • Return the tart to the oven and bake for about 30 minutes or until golden.

INGREDIENTS

  • 250 grams short crust pastry
  • 150 grams Carnation Evaporated Milk
  • 30 grams self-raising flour, sifted
  • 75 grams butter, at room temperature
  • 120 grams ground almonds
  • 75 grams castor sugar
  • 2 eggs, beaten
  • ½ teaspoon almond essence
  • 75 grams strawberry or raspberry jam
