CHERRIES IN MARSALA

Preparation Method :

  • Put the cherries, Marsala, nutmeg and sugar in a saucepan and bring to the boil over moderate heat, stirring to dissolve the sugar.
  • Reduce the heat to low and simmer gently for 15 minutes. Remove from the heat and transfer it to a serving dish.
  • Return the pan to the heat and boil the liquid for 4- 5 minutes or until it is thick to syrup form. Pour the syrup over the cherries.
  • Chill the dish in the refrigerator for at least 1 hour. Top the cherries with the stiffly whipped double cream before serving.

INGREDIENTS

  • 1 kg canned stoned Morello cherries, drained 
  • 150 ml Marsala 
  • ½ teaspoon grated nutmeg 
  • 1 tablespoon sugar
  • 150 ml double cream, (stiffly whipped)
