Preparation Method :
- Butter 4 small souffle dishes and dust with flour.
- Melt the butter in a small saucepan. Add the flour and stir to a smooth paste.
- Slowly pour in the milk, stirring constantly, to make a smooth sauce.
- Add the ground almonds and egg yolks, and mix well and rapidly. Do not leave the pan on the heat.
- Add the superfine sugar and the Amaretto and mix well again.
- Quickly whisk the egg whites in a large bowl until stiff. Fold in the almond sauce, and then quickly fold in the crushed macaroons.
- Divide the mixture between the prepared souffle dishes and cook in a preheated oven, 425°F, for 12 minutes or until risen and golden.
- Dust with confectioners' sugar and serve immediately.
