ALMOND SOUFFLES

Preparation Time :
10 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Butter 4 small souffle dishes and dust with flour.
  • Melt the butter in a small saucepan. Add the flour and stir to a smooth paste.
  • Slowly pour in the milk, stirring constantly, to make a smooth sauce.
  • Add the ground almonds and egg yolks, and mix well and rapidly. Do not leave the pan on the heat.
  • Add the superfine sugar and the Amaretto and mix well again.
  • Quickly whisk the egg whites in a large bowl until stiff. Fold in the almond sauce, and then quickly fold in the crushed macaroons.
  • Divide the mixture between the prepared souffle dishes and cook in a preheated oven, 425°F, for 12 minutes or until risen and golden.
  • Dust with confectioners' sugar and serve immediately.

INGREDIENTS

  • 2 tablespoon butter, plus extra for greasing
  • 200 grams all-purpose flour, plus extra for dusting
  • 300 grams milk
  • 300 grams ground almonds
  • 5 eggs, separated
  • 4 tablespoons superfine sugar
  • 300 grams Amaretto di Saronno
  • 8 macaroons, crushed
  • Confectioners' sugar, to decorate
