ALMOND MACAROONS

Preparation Method :

  • Line 3 baking sheets with parchment paper.
  • Mix the ground almonds and sugar together thoroughly. Whisk the egg whites and almond extract in a large bowl until stiff and glossy.
  • Add the ground almond mixture to the egg whites and fold in until evenly blended.
  • Using a small teaspoon, put spoonfuls of the mixture on the baking sheets leaving space between them so that they can expand slightly.
  • Place the baking sheets in a preheated oven, 350°F, and bake for 15 minutes.
  • The macaroons should be golden and slightly firm to the touch.
  • Remove the macaroons from the oven and leave for 5 minutes to cool and set.
  • Lift them off the parchment paper with a flexible knife and leave to cool completely.

INGREDIENTS

  • 300 grams ground almonds 
  • 500 grams superfine sugar
  • 4 large egg whites
  • 1 teaspoon almond extract
