PUMPKIN AND COCONUT MILK SOUP

Preparation Method :
- Remove the peel and seeds from the pumpkin. Finely chop the flesh.
- Put it in a saucepan with the coconut milk, onion, coriander and sea salt.
- Bring everything to a boil over medium heat. Add the tamari sauce.
- Cover and simmer until the pumpkin is very soft and can be mashed to a puree, about 30 minutes. Season to taste with the pepper.
- Pour the soup into four individual bowls, and scatter the spring onions (scallions) over the top.
