- Put the peanuts in a heavy saucepan, and set over medium heat. Stir until they brown and smell very nutty, about 2 minutes. Tip into a bowl.
- Mix together all the remaining ingredients apart from the oil.
- Very lightly grease the frying pan with oil. Set it over very low heat. Put in the coconut mixture. Stir it over low heat about 5 minutes or until it is golden brown.
- Tip the mixture into the bowl with the peanuts. Cool.

- ½ teaspoon ground coriander
- 1 medium onion, finely chopped
- 1 garlic clove, crushed
- Juice of ½ lemon
- Cooking oil for greasing
