Preparation Method :
- Simmer the green beans until just tender and set aside. Heat the oil until very hot, remove from the heat and add the whole spices.
- Over the heat, add the fresh coriander, salt and tomatoes and stir-fry for about 2-3 minutes.
- Add the diced mango and the green beans and stir-fry for about 5 minutes.
- Garnish with chopped green chillies and coriander.
INGREDIENTS
- 2 tablespoons chopped fresh coriander
- 250 grams whole green beans cut 1 cm pieces
- 1 teaspoon salt
- ½ teaspoon mustard seeds
- 4 tomatoes, diced
- ½ teaspoon onion seeds
- 1 small unripe mango, diced
- 4 curry leaves
- 3 green chillies, finely chopped
- 4 whole dried red chillies
