STUFFED POTATO

Preparation Method :
- Boil potatoes and then peel and cut into half.
- Scoop out the center portion of the potato.
- Mash the Scooped potatoes.
- Heat a pan and add sesame oil, onions and stir fry them until they start changing colour.
- Then add ginger-garlic paste and mix it well and after 2-3 minutes, add red capsicum, yellow capsicum, green capsicum, carrot, green chillies and then add salt, red chilli powder and black pepper powder and mix it well.
- Let it cook for about 5 minutes and add mashed potatoes and mix it well.
- After 5 minutes, add tomato paste and take it off from the flame.
- Take a frying pan and add a little sesame oil.
- Fill in the scooped out potatoes with the vegetable mixture and place some cheese and place this stuffed potato in the pan.
- Similarly, fill in all the potatoes and cover the lid for about 1-2 minutes until the cheese melts.
- Serve hot.
INGREDIENTS
- 4 Potatoes
- 1 tablespoon grated cheese
- 1 onion finely chopped
- 1 tablespoon ginger-garlic paste
- 100 grams red capsicum finely chopped
- 100 grams yellow capsicum finely chopped
- 100 grams green capsicum finely chopped
- 1 carrot finely chopped
- 5 green chillies
- 1 tablespoon tomato paste
- Salt as per taste
- 1 tablespoon black pepper powder
- 1 tablespoon red chili powder
- IDHAYAM Sesame oil for frying
