Preparation Method :
- Slice the tops of capsicum. Remove seeds and apply salt inside. Keep upside down for at least 10 minutes.
- Peel and mash the potatoes. Finely chop onion. Preheat oil in a small frying pan. Add onion and fry till golden brown.
- Add potatoes, salt and pepper. Fry over high heat for 10 minutes.
- Add lemon juice and coriander leaves. Mix well. Stuff capsicums with equal portions of potato stuffing. Top with equal portions of cheese.
- Cook in a slow oven till capsicums are tender.
- Serve hot.

- 8 large capsicums
- 8 medium sized boiled potatoes
- 2 onions
- 4 tablespoons IDHAYAM sesame oil
- Salt to taste
- Pepper to taste
- 1 lemon
- 200 grams chopped coriander leaves
- 6 tablespoons cheese
