Preparation Method :
- Do not chop the tail of the brinjal, slit the plain side both ways. Stuff it with pitlai podi, added with required salt.
- Extract tamarind juice for 1 tablespoon, or paste.
- Place brinjal in a microwave dish mix with a teaspoon of oil and cook for 2 minutes to allow water to evoporate.
- Remove and sprinkle with tamarind juice. Now cook again for a minute.
- Remove from microwave, allow mustard seeds to splutter in oil and add and place the brinjal one beside the other in the non-stick pan, close lid and allow to roast for 3 minutes. Open lid, turn sides of the vegetable and cook again with closed lid.
- Serve hot.

- 20 Brinjal
- Pitlai powder for filling
- 2 tablespoon Tamarind
- 1 teaspoon Mustard seeds
- 4 tablespoons Cooking oil
- Salt as required
