Preparation Method :
- Trim the bananas and cut each cross ways into equal pieces with lengthwise slit along each piece of banana.
- Finely chop the coriander leaves.
- Mix together the ground coriander, cumin, chilli powder, salt, turmeric, sugar, gram flour, chopped fresh coriander and 1 tablespoon of the oil.
- Carefully stuff each piece of banana with the spice mixture, without breaking the bananas into half.
- Heat the remaining oil in a large pan and fry the cumin and mustard seeds until they begin to splutter. Add the bananas and toss gently in the oil.
- Cover and simmer over a low heat for 15 minutes, stirring from time to time, until the bananas are soft but not mushy.
- Garnish with the fresh coriander sprigs.

- 1 bunch fresh coriander, few sprigs for garnish
- 5 green unripe bananas or plantains
- 2 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 teaspoon chilli powder
- ½ teaspoon salt
- ¼ teaspoon ground turmeric
- 1 teaspoon granulated sugar
- 1 tablespoon gram flour
- 75 ml Cooking oil
- ¼ teaspoon cumin seeds
- ¼ teaspoon black mustard seeds
