OKRA IN YOGURT

This tangy vegetable dish can be served as an accompaniment, but it also makes an excellent vegetarian meal if served with tarka dhal and warm, freshly made chapattis.
Serves :

Preparation Method :

  • Wash and trim the okra, cut into 1 cm / ½ inch pieces and place in a bowl. Set aside.
  • Heat the oil in a medium, heavy pan. Add the onion seeds, green chillies, and onion. Fry for about 5 minutes until the onion turns golden brown.
  • Reduce the heat. Add the ground turmeric and salt to the onions and fry for about 1 minute.
  • Add the prepared okra, turn the heat to medium-high, and quickly stir-fry the okra until they are lightly golden.
  • Stir in the yogurt, tomatoes, and coriander. Cook for further 2 minutes.
  • Transfer the okra to a serving dish and serve immediately with freshly made chapattis.

INGREDIENTS

  • 450 grams okra
  • 1 tablespoon Cooking oil
  • ½ teaspoon onion seeds
  • 3 medium fresh green chillies, chopped
  • 1 medium onion, sliced
  • ¼ teaspoon ground turmeric
  • ½ teaspoon salt
  • 1 tablespoon natural (plain) low-fat yogurt
  • 2 medium tomatoes, sliced
  • 1 tablespoon chopped fresh coriander (cilantro)
  • Chapattis, to serve
