MASALA OKRA
Okra, or "lady's finger” is a very popular Indian vegetable. Here the pods are stir-fried with a dry masala mixture to make a tasty side dish.

Preparation Method :
- Wash, dry, and trim the stalks away from the top of the okra, being careful not to pierce the pod itself. Set the okra aside.
- In a bowl, mix the turmeric, chilli powder, cumin, ground coriander, salt, sugar, lemon juice, and fresh coriander.
- Heat the oil in a large, heavy pan. Add the cumin seeds and mustard seeds, and fry for about 2 minutes or until they start to splutter.
- Scrape in the spice mixture and continue to fry for 2 minutes.
- Add the okra, cover, and cook over low heat for 10 minutes, or until tender.
- Garnish with chopped fresh tomatoes and serve with poppadums.
INGREDIENTS
- 450 grams okra
- ½ teaspoon ground turmeric
- 1 teaspoon chilli powder
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- ¼ teaspoon salt
- ¼ teaspoon granulated sugar
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh coriander (cilantro)
- 1 tablespoon Cooking oil
- ½ teaspoon cumin seeds
- ½ teaspoon black mustard seeds
- Chopped fresh tomatoes, to garnish
- Poppadums, to serve
