SPINACH WITH MUSHROOMS

Preparation Method :
- Heat the oil in a wok or heavy pan and fry the onions with the curry leaves and the onion seeds until it splutter.
- Add the ginger, garlic, chilli powder, salt and ground coriander. Stir-fry for a further 1-2 minutes.
- Add half the red pepper slices and all the mushrooms and continue to stir-fry for at least 2 minutes.
- Add the spinach and stir-fry for 5 minutes, then add the ricotta and half the fresh coriander, with the remaining red pepper slices.
- Stir-fry for few minutes before serving, garnish with the coriander sprigs.

- 125 grams mushrooms, roughly chopped
- 250 grams low fat fromage frais or ricotta cheese
- 450 grams fresh or frozen spinach, thawed
- 2 medium onions, diced
- 50 ml Cooking oil
- 6-8 curry leaves
- ¼ teaspoon onion seeds
- 1 teaspoon crushed garlic
- 1 teaspoon grated fresh root ginger
- 1 teaspoon chilli powder
- Salt to taste
- 1½ teaspoon ground coriander
- 1 large red pepper, seeded and sliced
- 2 tablespoon fresh coriander leaves
