SPINACH WITH GOLDEN POTATOES

Preparation Method :
- Heat the oil in a large pan and fry the mustard seeds until they begin to splutter.
- Add in the sliced onion, garlic and ginger and fry for about 5 minutes, stirring.
- Stir in the potatoes, chilli powder, salt and water and cook for 10-12 minutes, stirring occasionally.
- Add the spinach to the pan. Cover and simmer for 5 minutes or until the potatoes are tender.
INGREDIENTS
- 750 grams firm potatoes, cut into small chunks
- 500 grams spinach, blanched, drained and squeezed
- 2 tablespoon Cooking oil
- 1 teaspoon black mustard seeds
- 75 grams onion, thinly sliced
- 3 garlic cloves, crushed
- 1 inch piece fresh root ginger, finely chopped
- 100 ml water
- 1½ teaspoon chilli powder
- Salt, to taste
