SPINACH WITH COTTAGE CHEESE

Preparation Method :
- Heat the oil in a deep pan; add the garlic and the boiled spinach. Mix well. Fry the spinach until the colour changes and all the water has evaporated.
- Add in the remaining ingredients except cardamom powder and cook until the water is reduced to half its original quantity. Adjust seasoning with salt.
- Add in the drained, fried cottage cheese. Cook till all the water has been absorbed. Add in the green cardamom powder and mix well.
INGREDIENTS
- 1 kg Spinach, leaves only, washed, boiled, drained and coarsely chopped
- 550 grams Cottage cheese, cut into cubes, fried until light brown, drained and immersed in water
- 150 ml Cooking oil
- 1 tablespoon Garlic paste
- 1.5 litre Water
- 7-9 Green cardamom
- 5-6 Black cardamom
- 1 teaspoon Turmeric powder
- 2" Cinnamon sticks
- 1 teaspoon Dried ginger powder
- ½ teaspoon Black pepper powder
- ½ teaspoon Black cumin seeds
- Red chilli paste and salt, to taste
- ¼ teaspoon Green cardamom seeds, powdered
