SIMPLY SPICED SPINACH

Preparation Method :
- Place the spinach, tomatoes, garlic, onion, ginger, chilli and salt in a saucepan. Cover and cook for about 15 minutes, stirring occasionally.
- Uncover and reduce most of the excess water over a high heat. Cool slightly, then puree and return to the pan.
- Sprinkle over the flour and stir into the pan. Cook for another 5 minutes, adding more water if needed.
- The spinach should be thick but still a puree. Stir in the garam masala, lemon juice to taste and the butter. Serve hot.
INGREDIENTS
- 500 grams fresh spinach, washed and chopped
- 2-3 garlic cloves, roughly chopped
- ½ small onion, roughly chopped
- 100 grams tomatoes, chopped
- 1 inch piece of fresh ginger, peeled and roughly chopped
- 1-2 green chillies, seeded
- 1 teaspoon butter
- 2 teaspoon gram flour
- A pinch of garam masala
- Salt to taste
- Lemon juice to taste
