QUICK SAUTEED SPINACH WITH DILL

Preparation Method :
- Steam the spinach until wilted. Squeeze out the excess water when cool enough to handle.
- Heat the oil and butter in a saute pan. Add the onion and cook for a few minutes or until softened.
- Add the garlic and cook gently for one more minute or until just cooked but not coloured.
- Add the spinach and tomatoes, spices and seasoning. Stir-fry for 5 minutes, without adding any water.
- Finish with the dill and lemon juice, and serve.
INGREDIENTS
- 5000 grams baby spinach, washed
- 50 grams baby tomatoes, halved
- 1 tablespoon Cooking oil
- 2 tablespoon butter
- 1 small onion, chopped
- 1 tablespoon chopped dill
- 6 fat garlic cloves, finely chopped
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- Pinch of freshly ground black pepper
- A pinch of turmeric
- Lemon juice, to taste
- Salt, to taste
