COURGETTES WITH GREEN PEPPERS

Preparation Method :
- Heat the oil in a shallow pan over a medium heat and add the cumin seeds. When the seeds begin to sizzle, add the courgettes and green pepper and fry for 3-5 minutes, stirring frequently.
- Simmer to low flame and pour in the yogurt mixture. Stir continuously for 3-5 minutes. Remove from the heat and drizzle with the lemon juice.
- Combine a pinch of black pepper with the chilli powder and generously sprinkle over the dish.
- Serve with rice and chutney.
INGREDIENTS
- 350 grams courgettes, Cut in half lengthways, then into slices
- 1 small green pepper, cut into half, deseeded and then cut into thin slices
- ½ teaspoon chilli powder
- Freshly ground black pepper, to taste
- ½ teaspoon cumin seeds
- 2 tablespoons Cooking oil
- 2 teaspoon lemon juice
Yogurt Mixture
- Salt, to taste
- 2 tablespoons natural yogurt
- 2 teaspoons coriander powde
